a company who potentially use ATS as their means of finding quality
candidates, how do they ATS analyze more than one attachment i.e “resume”
and “cover Letter” and in my case “portfolio”? This entire process seems
much more tricky. I would love to send you my stuff and capture feedback
from you if possible.

It is tricky. Upload the resume file first. Make sure it uses the exact
same words as in the job description to describe your work (if true, of
course). That means tailoring each resume you upload for each job. Upload
the portfolio second (UNLESS THEY TELL YOU TO DO IT DIFFERENTLY).
